I am no Linux guru. I am looking for a light version of Linux that boots quick into a live environment that supports writing to a GPT partition. Does such an animal exist?

I would go with Puppy because that would probably boot the fastest

Hmmm been trying Puppy... I'll try the latest version
I have been using the latest version of Puppy in a live environment when doing data recovery/transfers in my shop. Every time I try to transfer data from a drive to another drive that has a GPT partition using the latest version of Puppy I get the error that the destination drive is locked. I can read and pull data from a GPT partition however writing to that partition is not allowed. I have found this issue on numerous occasions.
I can read and write to a NTFS or FAT partition as usual

that may be a little tricky to do but what I am thinking you can try
boot up a windows pe live disk or USB then check to see if you can write data to GPT partition
