Combining Hard Drives

I looked through the list of videos and didn't find one that I felt addressed this issue.

For Windows 7 pro and Windows 10.
I have two older drives, G and E, and I would like to combine them onto a single new drive while keeping the G and E partitions and program extensions intact. Any suggestions on how to best do this while picking and choosing what I wish to migrate over without having to clone the entire drives themselves? (They contain old windows XP installation info that I don't need any more.)
